Seneca Apple Chips asked me to create a summer recipe that would show off the crispy crunchiness of their healthy snacks. So why not put healthy on healthy and use it to make some homemade granola?

And because I want to use ALL the summer fruit ALL the time, I've doubled your money and included it in a fabulous peach-blueberry yogurt granola parfait.

Granola is the perfect snack for summer—use it on these yogurt parfaits, take it to the beach, put it on your ice cream, the possibilities are endless!

Ingredients you'll need
For the yogurt parfaits:
- Fresh peaches and blueberries: I love this summer fruit combo of peaches and blueberries, but change it up to use what's available.
- Plain or flavored yogurt: Regular or Greek both work well.
For the granola:
- Rolled old-fashioned oats: Don't use quick oats.
- Raw almonds and raw pepitas (pumpkin seeds)
- Seneca Apple Chips: Any flavor works!
- Brown sugar
- Olive oil and kosher salt
How to make yogurt granola parfaits
Granola recipe adapted from New York Times Cooking. Makes about 3 - 4 cups.
Step 1: Chop almonds and mix dry ingredients
Preheat the oven to 300 degrees F. Place a rack in the center of the oven. Line a baking sheet with parchment paper.
Use a good chef's knife and give the almonds a rough chop.
In a mixing bowl, combine the oats, chopped almonds, and pepitas.

Step 2: Prepare and mix in wet ingredients
In a small saucepan, heat the honey and brown sugar over medium low heat, stirring until the sugar is completely melted. Remove from heat and quickly stir in the olive oil and salt. (The olive oil will not completely emulsify into the sugar mixture, so don't worry about that.)
Pour the liquid over the oat mixture and stir until fully incorporated and all the oats, almonds and pepitas are nice and coated.
Step 3: Bake the granola
Spread the granola mixture onto the prepared baking sheet. Bake on the middle rack for 15 minutes, then remove and stir it around, so the edges aren't getting too dark too fast.
Put the baking sheet back in the oven and bake for another 20-27 minutes, until it's golden brown and reaches your desired level of crispiness.
Let the granola cool on the tray for at least an hour. Add one 2.5 ounce bag of your favorite flavor of Seneca Apple Chips.
Step 4: Layer the yogurt parfaits
To make the parfaits, add yogurt, fruit, and granola in alternating layers to a glass, ending with some of that crispy homemade granola on top!
Tips for yogurt granola parfaits
- Once the brown sugar has melted, remove from heat immediately. We don't want to reduce it or, heaven forbid, turn it into caramel.
- Measurements for the fruit, yogurt and granola in the parfaits will vary according to the size of glass you are using.
- Serve these at brunch at a make-your-own parfait bar!
Make ahead instructions
You can make the granola for these yogurt parfaits up to one week ahead! Allow it to cool completely, then store in an airtight container in a cool, dry place. When ready to use, just layer with seasonal fruit and your favorite yogurt!
Yogurt granola parfait recipe variations
- Swap out the peaches and blueberries for any seasonal fruit! Pears, apples, strawberries, apricots, cherries, etc.
- Instead of fresh fruit, try layering in blueberry compote, strawberry compote or apple compote.
- Use any type or flavor of yogurt: Greek or regular, plain, vanilla, lemon, and so on.
- Substitute the almonds for other nuts like walnuts, hazelnuts or peanuts.

- ½ cup raw pepitas
- ¼ cup honey
